One way to help preserve freshness is to use packaging for roasted coffee that protects the coffee from environmental factors.  Our packaging was carefully selected from many possible options with freshness in mind. We selected 5.4 mil zip-lock plastic bags with degassing valves to help keep oxygen from the beans as much as possible. Each time you open the baq, you can re-seal it and express the remaining air from the bag through the valve. This reduces the oxidation on the surface of the beans.

Having identified light as an enemy of freshness, it might seem strange that we selected clear bags that light can penetrate. The benefits of the clear bag outweigh the limitation, particularly when the limitation can be addressed by simply storing the bag in a dark place away from light.  With that solved, the clear bag's benefits are that it allows you to always know how much coffee you have.  And, it is useful after it's life as a coffee container as a see-through dry food container for use in your kitchen.  We recycle our bags by using them for storing our pasta, rice, beans, crackers etc.  The clear plastic allows us to easily see what is in what bag and helps preserve the freshness of these other dry foods.
